Commercial dishwashers are compared by throughput (racks per hour) and water efficiency (gallons per rack). A high-temperature machine sanitises with heat alone; a chemical-sanitising machine uses less energy but requires chemical supply. Both must meet NSF/ANSI 3 sanitisation standards.
Water use is the larger operating cost for most installations. The difference between a 0.6 gal/rack machine and a 1.2 gal/rack machine is hundreds of dollars per year in water and sewer charges, plus the energy to heat that water.
