Ice machines are rated by harvest rate (pounds of ice per day) and energy efficiency (kilowatt-hours per 100 pounds of ice). A higher harvest rate means more production capacity, but the efficiency number reveals the operating cost — the best machines produce the same ice with 40% less electricity than the worst.
Ice type matters for the application: cube ice melts slowly and suits drinks, flake ice packs around food for display, and nugget ice is soft enough to chew. The ice hardness factor measures density on a 0–1 scale — harder ice melts more slowly but takes more energy to produce.
