Commercial ovens are rated by production capacity (pounds per hour in convection mode) and cooking energy efficiency — the percentage of input energy that reaches the food. A convection oven circulates heated air for even cooking; efficiency ratings above 70% are considered high-performing.
Gas and electric ovens serve different installation constraints. Gas requires ventilation and a supply line; electric requires adequate circuit capacity. The energy cost comparison depends entirely on local utility rates — neither fuel is universally cheaper.
